this is by far the most delicious thing I have cooked and eaten in a while, and I’m not even sure how to describe it since it’s so strange.
I cooked 1/4 cup kasha with chopped wakame, and mixed that in a large bowl with sliced raw kale and a whole ear of corn kernels. then I boiled cauliflower, leek and fennel with a touch of mirin and ume plum vinegar. after the vegetables were soft I put it in the vitamix with a yellow heirloom tomato and a lot of fresh shiso, basil, and garlic chives. I blended it til creamy and smooth and poured on top of the kale, corn and buckwheat. as I stirred, the kale was cooked by the heat of the purée.
topped it off with plenty of fermented cukes and a couple spoonfuls of the delicious brine, some freshly cracked pepper and some onion blossoms.
it’s somewhere between a puréed soup and a risotto? I don’t care - it is sooooo good!!!
